Vital wheat gluten is a product of taking wheat flour and removing the starch, leaving mostly the gluten protein. The resulting flour-like powder is low in carbohydrates and very high in protein, approximately 75% protein by weight. It is used as a binder and to increase protein content in baking. It can also be used to make seitan, a versatile meat alternative. Product of Australia.
